    The very ugly cake

End of 2020 came with a very intense and fulfilling mission: I have baked the most wonderful cake ever existed. Wonderful as in delicios. When it comes to the aspect… well, you may check the title. I am very untalented when it comes to baking so I declare myself happy with the result! Happy guests, happy host čÖé Just to give you a bit of background, this cake was one of the surprises my boyfriend got on his birthday, which means that after the photo shooting I have done on the 29th of December in the afternoon, I drove to Metro one hour before closing time to do the final…

A trip to London that turned into my mantra

I went to London (again!) to surprise a dear friend on her birthday. I didn’t manage to prepare a gift in advance as I gave up after weeks of trying to find something nonconsumerist, small enough that would fit in my hand luggage. On the night before my trip, I decided to stay up all night and finish some work on ongoing projects, since a flight at 6 am would have made me to wake up at a very upsetting time. This being said, I managed to finish everything I had in mind by 2 am when inspiration striked and I just followed. What gift would have been better on…

My first quiche – perfect dough, with spinach, mozarella and leek

I have to say that I’m not a big fan of baking. But I discovered the perfect recipe for the dough and I can now admit that baking during cold weekends is my new passion! The trick is: you need a kitchen scale and a good oven. No previous experience required!   Step 1: the dough This is also a great pizza dough! 200 gr spelt flour 1 teaspoon baking powder 125 gr Skyr/creamy yoghurt/ [insert English word for Quark here] 50 ml milk 50 ml liquid cream 3 spoons olive oil 1 teaspoon salt some butter/olive oil for greasing the mould No rocket science – you just mix everything…

    Raspberry cake (gluten free)

With 80 grams almonds flour leftovers from making vegan milk and little sugar, I have made this delicios cake (seriously, it’s really tasty). don’t worry if there are still pieces of almonds in it, you don’t need powder for this recipe. Ingredients: 80 gr almond flour 1 ripe banana (smashed with a fork) 2 eggs baking powder (about half of teaspoon, no more than that) 4 teaspoons sugar (I used coconut sugar) raspberries First, separate egg whites from yolks and beat the egg whites until you form a nice snow. I made the “turn the bown upside down” test. It should be so hard that it stays in the bowl…

Eat breakfast like a Queen / Aubergine, Spinach, Feta Cheese delight or The Healthy Fast Food

Here’s a good start of the day when I wake up at 5 am: a quick shower, espresso macchiato, and a warm breakfast that will cook by itself, because no matter how much I love cooking, when it’s that early I barely know my name čÖé Ingredients (single serving) about 200 gr aubergine (2 small aubergines) a handful of spinach about 100 gr feta cheese one clove of garlic spices (oregano, basil, rosemary, salt) olive oil I am very efficient with my time so I developed a way to avoid the cutting board. I will write about it soon, since it’s so helpful! Therefore, my eggplants are already cut into…

3 Great Day Trips from Berlin (no overnight stay needed)

When you have been living in Berlin for a while but not long enough to go on a vacation in a different country, and wanderlust strikes in, you might want to take into consideration the nearby satellite cities. I haven’t been to many, but what I’ve seen so far really impressed, probably due to the nature and abundance of trees. Brandenburg offers plenty of options. This gave me that feeling of 3rd grade, summer vacation, tiny village, wonder around at day long at my grandparents – those days were bliss. What can I do with all this nature on my hands? First of all, you get away from traffic. Think…

Vegan Mango Lassi (no sugar added)

Mango lassi is a creamy, indulging drink that you can enjoy in most Asian restaurants in Berlin. I preffer it next to Indian food, but sometimes when I don’t want to go out I can easily prepare it at home – it takes about 15 minutes and another 3 to drink it čÖé I serve it as a dessert or as a snack. It’s a convenient smoothie for lazy morning when you want to drink something sweet without adding sugar. What do I need for it? 2 ripe mangos 200 ml rice milk (unsweetened)* mixer *quantities for 2 portions Where do I start? First, peel the mangos and cut into…

Warm salad with green lentils, dried tomatoes and chili

Whenever I come home and┬áwe have the following┬álethal combination –┬áempty fridge +┬áfamished┬áowner – I need to prepare something FAST. So I throw some lentils in a pot and boil them. There are various combinations one can make, depeneding on what you have in the kitchen. I usually have dried tomatoes, which balances perfectly the flavour of the lentils. Why I recommend this? it’s quite fast to prepare seems quite fancy but it’s no rocket science source of vegetarian protein Ingredients: green lentils (important to have either green lentils or puy lentils) chickpeas dried tomatoes peppers (to add colour, use green, yellow and red) cherry tomatoes parlsley lemon juice (1/2 lemon)…

    Raw vegan truffles

I usually prepare these on lazy Sundays (yes, lazy days are for raw vegan sweets) so that I’ll have enough for the cravings in the upcoming week. They can be quite sweet, without having any added traditional sugar. Why I recommend this? They are extremely easy to prepare. You don’t need previous experience in the kitchen. It takes about 30 minutes (including doing the dishes afterwards). They are satisfying and it’s a pleasure to enjoy them. NO sugar added! If you want to amaze someone who┬ádoesn’t trust raw vegan at all – this is the thing to do! Ingredients coconut flakes sesame seeds flax seeds almonds dates cranberries dried plums…
